Baked rice


You have already been able to read a recipe for Nasi Goreng on Ohmyfoodness and officially the Dutch name for Nasi Goreng is "Fried Rice". The recipe that I show you today does not resemble the Nasi Goreng that I made earlier. I use a different type of rice in the recipe for this version of fried rice and there is no sauce involved. It may sound boring, but with all the ingredients that are added you have a very tasty and healthy dish that comes very close to the fried rice you can get from the Chinese. It requires relatively little time and the ingredients are suitable for a budget meal.

What do you need? (4 persons)

Two cloves of garlic
Shredded outing
Ham cubes
400 grams of chicken fillet
1 leek
2 eggs
350 - 400 grams of pandan rice
1. First, we cut all the ingredients: the chicken into cubes, leek into half rings (rinse well!), Chop an onion, chop the garlic and dice the ham. Boil water for the rice. Once the water boils, add the rice and bring it to the boil again. Let boil for about ten minutes, drain and then stand for another 15 minutes in the pan with the lid on.

2. Heat a little olive oil in the pan and fry the onion and garlic. Make sure that the pan is good and start stirring immediately as soon as you add the garlic. If you do not do this, you have the chance that the garlic will burn and that will make it bitter. Once the onion is glassy, ??add the chicken. Season with salt and pepper.

3. As soon as the chicken starts to turn brown, add the leek and the cubes. I opted for canned ham myself and cut it into pieces myself, of course you can also use ready-made ham cubes. That saves you time. Stir the mix well until the leek starts to soften. Season with pepper and salt.

4. Once the vegetables are cooked, add the rice. You will initially think that you have cooked far too much rice for this dish, but you will see that this is not the case. If you don't have Pandan rice by the way, you can choose to use just white rice, but it is much less spicy in taste. You can solve this by adding a crushed garlic clove to the water when you cook the rice. Mix the dish well and let it simmer for about five minutes on high heat, until you hear that the rice is getting crispy.

5. Make a well in the center of the rice and smash the eggs in it. Let it stand for a moment until you notice that the egg starts to solidify a bit. If this is the case, stir the whole dish well so that the egg spreads well. Because you completely mix the egg with the rice it takes a while before everything has solidified, but be patient. You will notice that the rice sticks together in the beginning because of the raw egg, so keep stirring well until all the egg has solidified completely.

6. Let the rice bake for about seven minutes, stirring regularly. Of course, the rice is not supposed to burn, you have to make sure that it is no longer sticky, but really grains in itself.

And that's it! You can choose to season the rice with some soy sauce or you can serve chicken saté alongside it, but for me the garlic and the pandan rice added enough flavor to the dish. Another big advantage of pandan rice is that it is not dry like white rice, so the dish is not difficult to remove.
