How to make a fried rice or a fried rice

Here is how to make a simple fried rice or fried rice. Flavors come from the power oil and use of fish sauce or shrimp paste (trassi).
Variation on this is of course possible with meat present in your fridge (chicken, smoked chicken, ham or even bacon cubes, but also leftover Tja Siu) and vegetables.

You use the following ingredients to make a fried rice:

INGREDIENTS to make a fried rice:

4 to 5 cups of cooked and cooled rice (preferably 1 to 2 days old),
1 egg,
2 spring onions,
Paksoi or Bean sprouts,
2 tbsp. power oil (oil with onion, ginger and garlic),
1 tbsp. salty soy,
1 tbsp sweet soy sauce,
1 tbsp. fish sauce or a piece of trassi,
1 tbsp. sambal oetlek or a red pepper,

Extra seasoning:
PeZo to taste,
1 to 2 tsp. sesame oil.
Extra soy or soy sauce or a little stock powder, if
necessary. Oyster sauce and a little Ve-Tsin,

Note: If you want to use meat, I prefer to bake it separately and add it again later.

This is how you make it:

Step 1: Prepare the rice (do this at least 1 day in advance);
Make use of cooled rice,
let a wok get hot and add 2 tbsp. put in the power oil,
put the egg in and stir it,
Bake the white of the spring onions and bok choy,
stir-fry this.

Step 2: Bake the rice;
Add the rice and fry for a moment,
make a mixture of the soy, soy sauce, fish sauce (or crushed trassi) and sambal, add
the mixture and stir everything well.

Step 3: Season and add meat as desired;
Add what you have pre-baked to
taste
,
Season with: Salt, pepper, Sesame oil,
Extra soy or soy sauce or a little stock powder,
Evt. Oyster sauce and a little Ve-Tsin,
Finally the green of the bok choy and spring onion.

Quickly stir well over high heat and heat through.

Step 4: Enjoy your meal.
