FRIED RICE:
A very complete and tasty Sino-Mauritian dish that will please your guests!
Hello hello, already a good weekend to all! Many of you have asked me for my fried rice recipe ! For the little explanation, the fried rice Mauritian has nothing to do with the Cantonese rice "French", I say French because here I find that we serve everything and anything in Chinese or Asian restaurants! In addition it is most of the time that frozen and it is far from being good and tasty!
In Mauritius, we are lucky to have a Cantonese heritage and the cuisine is exquisite and full of flavors. It is often a dish that is made when we receive a lot of people at home but I will say that the one we do is not as good as that found in the Sino-Mauritian restaurants . Where you can enjoy a good fried rice in Mauritius is David's restaurant in Rose Hill, The Pekingese .
As for all recipes, I have my way, my tips and the same goes for fried rice, I do what my palace told me to do. This fried rice is for ten people and if you still have it, know that it keeps very well in the fridge as in the freezer and it is even better the next day as many dishes. ingredients
For Fried Rice
2 large grated carrots
1/2 sliced ??white cabbage
1 big cup of frozen peas
4 chicken cutlets cut into small pieces
24 shelled shrimps
Duck fat (recovered in a box of duck confits)
Shrimp paste
Soy sauce with mushroom
1 small bunch of scallions
8 eggs beaten with omelette
500g basmati rice cooked Markal
1 crushed garlic clove
s-salt, pepper, glutamate
For the garlic sauce (to prepare the day before if possible)
150ml of white vinegar
1 tablespoon of sugar
1 teaspoon of salt
3 chopped garlic cloves
Before starting the next recipe, you have to prepare everything in different containers in order to be organized and not to forget something.
The first thing I do after preparing my ingredients is that I season everything beforehand.

1 - Seasoned cabbage and carrots (salt, pepper)

2 - Unpeeled peas

3 - Chicken mixed with a fillet of soy sauce, oil, crushed garlic, salt, pepper, glutamate.

4- Same for shrimp as for chicken

5 - The shrimp paste will serve to give this little "je ne sais quoi" to your dish, it will be necessary to put a teaspoon each time you will return each ingredient (you will understand below).

Preparation of fried rice
1- Fried rice seems complicated like that but not at all. What you need to know is that you have to return in a little duck fat and shrimp paste each ingredient and reserve them to finally mix everything at the end. This method allows each food to cook at its own pace and not to mix their taste between them but to preserve each one. See photos below to understand how to proceed.
